They are both examples of overblown excess, but I have to go with the Opening Ceremonies because they signal the beginning of Olympic competition. The Closing Ceremonies force you to look ahead and realize their won't be another Olympics for 2 years.

2-man (or Woman) Beach Volleyball or 6-man (or Woman) indoor Volleyball?

Depends on the sport (and the country of origin for the athlete) but generally these days with squillionaire basketball and tennis players:

I think dressage is more boring than shooting, but neither is the most boring "sport".
